Celebrating Family Firsts

A long to do list has discouraged me from blogging lately. Not that I am getting any thing done on that list. I’m just experiencing an immobilizing attack of guilt over what I haven’t done. Crazy, huh!

But an email message with photo sent four hours ago from son Jeremy gives me a celebratory urge that has overcome the inertia. He alerted me about the first home-cooked meal in the Louisiana Skupiens' new home that they moved into on Sunday: “Roasted veggies over whole grain pasta.”

And a call earlier today to the Georgia Skupiens unearthed the news that oldest grandchild Luke, 9, has been recognized as his elementary school's student of the month. Plus he was awarded a game ball in his opening Little League game. He made his team's only hit. Way to go, Luke!

  7. Yes, I am loving this kitchen, y'all! It is almost as big as the living room in our former house. And the gas stove is wonderful for when living in "hurricane country." Sandra, the drawers are also very nice, and what is even better is that ALL of the drawers in the kitchen AND throughout the house slide all the way out. So you don't have that funky space at the back of the drawer that is difficult to reach.
    The meal was a hit with the wifey, although she understood, as did I, that next time the carrots needed to be cut a little smaller. Had I done that, the total roasting time would have been roughly 20 minutes thanks to the convection oven (which I am also extremely excited to have).
    But the veggies consisted of carrots, zucchini, shallots, garlic, red bell pepper, and asparagus tips. Tossed in evoo, seasoned with rosemary, thyme, oregano, and a little kosher salt. 25 minutes at 400 or until carrots (that should have been cut smaller) are tender.

  8. @Diane: Cosco step ladder. And that is my only qualm. We definitely increased our cabinet space, but actually took a hit on "functional" cabinet space. Which in retrospect isn't that bad because we were dysfunctional with cabinet space at the former house. Lol!

  9. And believe it or not, there are actually higher cabinets that aren't visible in the picture. I guess that is where I will hide the check book! Bwahahahahaha!!!!
